syncdb with new languages

If I add a new language, how can I tell django-easymode to add columns for
that language?

You should use a database migration tool like south:

http://south.aeracode.org/

After you added a language you can just create a new database migration using

manage.py schemamigration --auto <appname>

This will create the migration that will add the new columns.

Next you should run

manage.py migrate

And the columns will be added to the database.

I already use migration. it's a good news.

Another question: using south is there a signal I can catch to execute a
custom python method I've made for create full text indexes on translated
fields?

I am not aware of any such hooks, please refer to the south documentation 
for that.
